August 22, 2014 - West Des Moines, IA - Fried food was not the only fan favorite at this year's Iowa State Fair.  Hundreds of people took the time to stop by the Ag Building and sample original Mori-nu Silken Tofu-based salad dressings presented by four professional chefs as part of The Soyfoods Council and Iowa Restaurant Association's 2nd Annual Soy Salad Dressing Competition. The Professional Chef's Competition took place Monday, August 11 at the Agriculture Building. Some of the area's top chefs were invited to showcase their artistry in this delicious and healthy competition.

Top Chefs Wow the Crowd
The competitors included: 
· Chef Michael Kelley of the Great Caterers of Iowa, Pleasant Hill
· Chef Eric McDowell of Prairie Meadows, Altoona
· Chef Brian Pomerenk of the Iowa Machine Shed , Urbandale 
· Chef Robert Sanda of Tally's, Beaverdale

The Chefs were challenged to make salad dressing recipes which were consumer friendly, used Mori-nu Soft Silken Tofu as the base of the dressing and were delicious enough to put on their own menu.  Each chef demonstrated the process of making the dressing, then served five judges as well as a crowd of fair-goers who then cast their vote for People's Choice award winner. 

Contest judges included Tom and Susanne Oswald of the Iowa Soybean Association, Liz Cox of the Iowa Healthiest State Initiative, Wini Moranville of KCWI's Great Day segment Great Foods, and certified culinary instructor Phil Carey of the Iowa Culinary Institute.

Sanda Wins, McDowell is People's Choice
Chef Robert Sanda won first place with a refreshing Walnut Silken Tofu Vinaigrette dressing. He received a $250 prize. Chef Kelley received second place for his Tofu Miso Soy Salad dressing and Chef McDowell received third place with a Summer Beef and Broccoli Salad with Miso Blue Cheese Vinaigrette dressing. Chef McDowell impressed the crowed with his elaborate recipes and received People's Choice award.

Students from Across Iowa Compete in State Culinary and Restaurant Management Competition

Create Three Course Meal in One Hour with Butane Burners

Winners of ProStart Competition to Represent Iowa in National Event

 

February 24, 2013, West Des Moines, Iowa– Students from across Iowa will be converging in West Des Moines on Monday, February 24th to compete for "top chef" honors as part of the Iowa ProStart Invitational hosted by the Iowa Restaurant Association Education Foundation.  Teams of culinary students will be given 60 minutes to prepare and present a three-course meal using only two butane burners.  Their creations will be tasted and evaluated by a panel of expert chefs and the winning team will advance to represent Iowa in the National ProStart Invitational in Minneapolis, May 3-5.

Management Competition

A second competition will also take place–this one focused on restaurant management and operations. Students have researched and prepared a presentation for a new restaurant concept.  They will present their concepts and then defend the viability of their ideas to a panel of restaurant owners and entrepreneurs from across the state.  The winning management team will also advance to Minneapolis.

"This is an extremely intense competition," explained Jessica Dunker, president of the Iowa Restaurant Association. "The students have been working on their recipes, restaurant concepts and presentations for months."

Six Schools Compete

All participating high schools use a curriculum called ProStart, developed collaboratively with educators and industry. ProStart is a nationwide, two-year high school program which blends culinary techniques and management skills. More than 1,900 schools across the country use the ProStart Program in their curriculum.  However, it has just started being broadly adopted in Iowa having grown from three Iowa schools two years ago to nearly 20 high schools today.

Schools participating in the competition include last year's winning management team, Davenport Community Schools, as well as Burlington High School, Cherokee's Washington High School, Des Moines Central Campus High School, Logan-Magnolia High School, and Waukee High School.

Ready to Work, Continue Education

"This is as real as it gets without working in the harried environment of a packed, five-star restaurant on a Friday night," said Dunker. "Students who can perform under this pressure, are well prepared to graduate and pursue a career in the hospitality industry or have a leg up on their post-secondary culinary or management education."

National restaurant management & culinary arts program blends classroom learning with real-life experience

August 26, 2013 - Davenport, IA - Family and Consumer Sciences (FCS) programs across the state are fast-tracking curriculums that provide career paths to students. With a projected growth rate of 1,000 jobs every year for the next decade, hospitality is an obvious partner industry. Davenport high schools (DCSD) have responded by implementing the ProStart® program, a two-year curriculum that teaches both culinary and hospitality management skills.

"The opportunities for young people in our industry are endless," said May Schaben, Executive Director, Iowa Restaurant Association Education Foundation. "The ProStart program prepares students for immediate employment and establishes a foundation for further learning. In fact, many collegiate hospitality management and culinary arts programs offer college credits for ProStart courses."

The program's satellite location is Davenport Central High School, but students from the entire Davenport Community School district are involved.

Preparing Students for Immediate Employment

The Iowa foodservice and restaurant industry currently employs 140,300 workers, or nine percent of Iowa's total workforce, and is expected to add 10,700 jobs over the next decade, the majority of which will be management level positions. Through the ProStart program, Iowa high schools are building a more prepared, highly skilled workforce to meet the industry's growing demand for professional employees. As one of 18 Iowa high schools participating in the ProStart program, DCSD students combine classroom work with mentored work experiences at local restaurants.

"We are excited that DCSD ProStart students will be connected with local industry," said Jenee Cross, DCSD ProStart Educator. "Hands-on experience is an effective way for students to connect academics to real-life situations."

Opportunities to Further Education

Once students complete all program requirements, they are awarded the ProStart National Certificate of Achievement, giving them access to scholarships and articulation agreements with leading colleges and universities. Currently seven community colleges across Iowa, in addition to Iowa State University, offer hospitality and management programs.
