Bakery Owner Tosses the Flour but Keeps the Flavor

More than ever, people understand that our bodies just weren't designed to handle the amount of processed flour found in many of today's food.

Some people with vague, undiagnosed illnesses feel better after cutting out gluten, a protein in flour-based foods. Many Americans, including professional athletes and celebrities such as Zooey Deschanel and men's tennis leader Djovak Nokovic, say they look and perform better since dropping gluten from their diets.

"Unfortunately, a lot of people who commit to a gluten-free lifestyle believe they have to sacrifice their favorite desserts, because gluten-free treats are often loaded with sugar but low on flavor," says Kyra Bussanich, (www.kyrasbakeshop.com), author of a new, full-color recipe book, "Sweet Cravings: 50 Seductive Desserts for a Gluten-Free Lifestyle" (Ten Speed Press; Random House, Inc.)

Bussanich's gluten-free cupcakes twice bested their floury competition on "Cupcake Wars" (2011 and 2012) and were a runner-up for the show's Cupcake Champion. She shares her secrets in recipes such as Mexican Chocolate Baked Alaska, Persian Love Cakes with Cardamom Buttercream and Vanilla Chiffon Cake with Blackberry Coulis.

After suffering a life-threatening illness at 20, Bussanich recovered with the help of a new diet without gluten. She began testing gluten-free recipes while attending the prestigious Le Cordon Bleu patisserie program and later opened her popular business, Kyra's Bake Shop.

"My recipes are not good 'for being gluten-free;' they're just good, and that's why people who eat gluten visit my bakery and order gluten-free desserts," she says. "For me, being diagnosed with an autoimmune disease allowed me to turn lemons into gluten-free lemon meringue pie!"

She invites anyone who doubts that gluten-free can be delicious to try the following recipe:

Apple Crisp

6 large tart apples (Pippin or Granny Smith)
1/3 cup sugar, or 1/4 cup maple syrup
2 tablespoons tapioca starch
1 tablespoon ground cinnamon
1/2 teaspoon Chinese five-spice powder
1/2 teaspoon ground ginger
Generous pinch salt
3 tablespoons cold butter

Topping

1/2 cup sweet white rice flour
1/2 cup millet flour
1/2 cup tapioca starch
1 cup packed golden brown sugar
1 teaspoon ground cinnamon
1 teaspoon salt
1/2 teaspoon Chinese five-spice powder
1/2 teaspoon ground ginger
3/4 cup butter, room temperature
3/4 cup gluten-free oats
1/2 cup chopped pecans or walnuts (optional)

Preheat the oven to 350°F. Peel, core and slice the apples into 1/4-inch slices. Put the apple slices into a large bowl and sprinkle the sugar over the top. Add the tapioca starch, cinnamon, five-spice, ginger and salt and toss together to evenly coat the apple slices. Pour into a 9 by 13-inch baking pan, dot the top with pieces of the butter and set aside. To make the topping, combine the flours, tapioca starch, brown sugar, cinnamon, salt, five-spice and ginger in a mixing bowl. In a stand mixer with a paddle attachment, mix in the butter until it is uniformly incorporated into the flour mixture. Stir in the oats and pecans.

Crumble the oat topping evenly over the apples. Bake until the topping is golden brown and set and the apples are warm and bubbly, 55 to 60 minutes.
You can prepare everything ahead of time. Refrigerate the apple filling and keep the topping frozen until ready to assemble and bake. Don't refrigerate the unbaked topping overnight since the millet flour will interact with the butter and taste and smell cheesy when it's baked.

MOLINE, Ill. (September 17, 2013) - The Quad City Mallards have signed forward Vladimir Nikiforov, the Mallards announced today.

"Vladimir is a quick, crafty guy who is a proven goal scorer and playmaker," said Mallards coach and general manager Terry Ruskowski.  "I saw him play in this league two years ago and he was the best player on the ice, so we're looking for a lot of productivity from him."

Nikiforov, 25, spent last season in Russia, where he scored ten goals and totaled 17 points in 45 games with Lokomotiv Yaroslavl of the Major Hockey League.

The 5' 7", 160-pound Nikiforov last played in North America in 2011-12 for the Bloomington Blaze.  Nikiforov scored 21 goals and recorded 51 points in 51 games with the Blaze after starting that campaign with the Federal Hockey League's Brooklyn Aviators, for whom he ripped off nine goals and piled up 20 points in ten games.

Over his first five years in professional hockey, Nikiforov has produced 71 goals and 184 points in 266 career games.  While the Hauppage, New York, native spent the bulk of his first three seasons in the ECHL, he also skated in 19 American Hockey League games for the Bridgeport Sound Tigers as a rookie in 2008-09.  Nikiforov played most of his first two years with the Utah Grizzlies before suiting up for three different ECHL clubs- the Florida Everblades, Bakersfield Condors and Reading Royals- in 2010-11.

Nikiforov played three seasons in the major junior Ontario Hockey League with the Barrie Colts and Sarnia Sting before turning pro.  In 2006-07, he helped the Colts to a first place finish in the OHL's Eastern Conference.  In all, Nikiforov registered 63 goals and 173 points in 179 OHL games.

The Mississippi Valley Blues Society is sponsoring a Brews and Blues Cruise on Sunday September 22, 2013.

We will start at Martini's On The Rock (4619 34th Street in Rock Island), where the party bus will leave at 1:00 p.m.  First we'll head to Bent River in Rock Island, then to Great River and Front Street in Davenport.  At each stop, two free samples and $1.00 off pints will be available.

Everyone will receive a commemorative glass. Door prizes will be drawn between each of the microbreweries including, but not limited to, fest tickets and MVBS merchandise.  We will return to Martini's On The Rock around 5:00 for blues music by the Candymakers, and $4.00 blues burgers.

Rock Island, IL - The Rock Island Public Library has partnered with the University of Illinois Extension on an opinion study aimed at gathering public input on library services, usage patterns, and perceptions.

Library users have until October 5, 2013 to complete an online survey that will provide the library with input on why they do or do not use libraries, the services they find most beneficial, and their feelings about the role of the library in their community.

"The purpose of the study is to gain a better understanding of how the public accesses our services, the value they place on specific services, and their perceptions about our organization. The responses we get will help us improve experiences with the Rock Island Library," said Angela Campbell, Rock Island Library director.

Individual survey responses are anonymous and confidential, with results collated by University of Illinois Extension staff. The online survey is available on the Library website at www.rockislandlibrary.org or at the following direct link: https://www.surveymonkey.com/s/Z2CBLDQ

CHICAGO - September 17, 2013. Lieutenant Governor Sheila Simon on Tuesday joined a panel of elected officials including Attorney General Lisa Madigan, Senate Republican Leader Christine Radogno and State Representative Patricia Bellock in a spirited panel discussion celebrating the role of women in politics. The dialogue was part of the League of Women Voters of Illinois' (LWVIL)State of the State event at the Union League Club of Chicago.

"I am honored to participate in this panel," said Simon.  "Over the last 100 years, women have gone from not being able to vote to holding some of the most important positions in the state. We have made tremendous progress and yet we still have more to do to build a better state for our daughters."

In an effort to commemorate the dedicated work of the courageous Illinoisans who worked to grant women the right to vote in Presidential elections over 100 years ago, the LWVIL hosted  a luncheon featuring a prominent panel of four female elected officials, including Simon, moderated by Chicago Tribunecolumnist Mary Schmich.  Proceeds from the State of the State benefit the organization's education fund and its mission of promoting civic education and voter service.

Due to the hard work and efforts of the Illinois Equal Suffrage Associationand many others, Illinois became the first state east of the Mississippi River to grant women the right to vote in Presidential elections with the signing of the Presidential and Municipal Suffrage Act on June 26, 1913. Seven years later the women's suffrage movement culminated with the ratification of the 19thAmendment to prohibit any United States citizen from being denied the right to vote on the basis of sex.   

 

"From Lottie Holman O'Neill being elected to the statehouse two years after the ratification of the 19th amendment to Dawn Clark Netsch being the first woman to win statewide office, Illinois has a history to be proud of," said Simon. "Now it's up to us to keep improving that record."
